At Vedens Lustgård

Tonight we went out for a rather special meal. I had booked a table at this local restaurant called 'Vedens Lustgård', situated in the countryside a few kilometers outside Skara. They have created such a buzz since they opened earlier in the summer, that there is a huge wait list to get a table. I managed to book our table over three weeks ago.

This place is very much a local venture, the young owners live here on the farm. It all started by them producing a local "mozzarella"-cheese which they called 'Sarella'; one thing led to another and they decided to start a pizzeria making Napoletan-style pizzas. It instantly became a huge success, and people are coming from near and far to enjoy these pizzas.

You can enjoy the pizzas here at the farm, but many, many customers turn up every night as well just ordering take-away pizzas.

Their goal is that everything they use to make the pizzas will ultimately come from within 1000 meters of the farm. So the inspiration, and the wood fired oven, comes from Italy, but the menu is very much local.

We were a bit early so we had to wait in the lounge for our table. Very rustic surroundings!

There was only five different pizzas on the menu, so obviously we ordered one of each! I really liked the white pizza with three different kinds of onion on it, but I think the common favourite was the one with the chili lamb sausage. Apparently they are planning on changing up the menu regularly, so already looking forward to coming back next summer to see what's cooking then!

Such a fun experience! Super tasty food in a really lovely environment! Well done 'Vedens Lustgård'!
